INGREDIENTS:
- 8-10 small apples (such as Granny Smith or Pink Lady)
- 1 sheet of puff pastry (thawed)
- 2 tbsp apricot jam
- 1 tsp ground cinnamon
- 2 tbsp sugar (for dusting)
- 1 egg (lightly beaten for egg wash)
PREPARATION:
- Core the apples and cut them into very thin slices. (A mandoline or a sharp knife works well for this.)
- In a small saucepan, heat the apricot jam over low heat until it becomes runny. This will be used for glazing the tarts.
- Roll out the puff pastry on a lightly floured surface to about 1/4-inch thickness. Using a round cookie cutter or a glass, cut out circles from the pastry. You can make them as big or as small as you like.
- Arrange the apple slices on a work surface and overlap them slightly, starting from the outside and working inward. The slices should form a rose shape.
- Place an apple rose on each puff pastry circle. Gently press the apples down to secure them.
- Brush the edges of the pastry with the apricot jam to act as a seal. This will prevent the edges from burning and give the tarts a nice shine.
- Dust the tarts with sugar and a light sprinkle of cinnamon.
- Preheat your oven to 400°F (200°C).
- Using a pastry brush, lightly brush the tops of the tarts with the beaten egg. This will give them a golden brown crust.
